'Ruz' رز - arabic
rice - noun
The humble rice grain, is the kindest, fluffiest carrier of flavours.
A steaming bowl of it - quintessential nostalgic comfort.
Our menus are rooted in simple grains and pulses, and are inspired by the refugee's culinary heritage, finding unique expressions in a newfound Scottish land.
We aim to inspire a deeper understanding and curiosity about our relationship to nature and the environment through our connection with food.
Ruzbowl is focused on wholesome, locally sourced food and the culture intimately connected with it. It recognises the need for people to take ownership of their food and empowers individuals by sharing methods of growing, preserving and cooking.
Food resides in the heart of communities and is a catalyst for environmental change.
Sourcing local, seasonal and (mostly) organic fresh produce from growers in and around Glasgow.
The levantine pantry - rooting nostalgia, memory and culinary representation for refugees from:
Cyprus, Egypt, Iraq, Jordan, Lebanon, Palestine, Syria, and Turkey.
Exploring alternative nutrient dense foods through wild foraging and traditional pickling/fermenting techniques.
Culturally immersive meals that explore nuanced Levantine cuisine and culture.
Creating opportunities for new locals to grow food and access land.
Bridging connections to the Scottish natural environment, through guided foraging walks, outdoor cookery and educational retreats.
